We’re really getting in the Christmas spirit here at Eastbourne LifeStyle HQ. We absolutely love the lead up to it – absolutely love it! So today we thought we’d share with you how to make mice pies the lazy girls way. We know that we’re all busy gals here, so we made it super simple for you.
What you need:
1 jar mince meat – ours came from Asda
1 packet of short crust pastry – ready rolled and wrapped on baking paper (Asda)
Caster sugar for sprinkling
1 egg
Icing sugar from sprinkling
Grease your muffin tray with butter then pop aside. Get your circle cutter and cut our 12 circles for the base of your mince pie. Once cut pop each circle into the muffin tin and make sure that they are in the right place.
Grab your mince meat and a teaspoon. Add a teaspoon of mincemeat in each circle of pastry. Don’t put anymore in there as of there isn’t enough space whilst cooking it won’t look so pretty when it comes out of the oven.
Then grab your star cutter and cut out 12 stars in your remaining pastry and pop them on top of your mincemeat. Next you need to brush egg over the top.
Sprinkle some sugar on top of each pie and put them in the oven at 180 degrees for 15 – 20 minutes. We put these in the oven for 19 minutes and they could have come out at 17.
Don’t worry if they look a teeny bit over done, they still taste yummy we promise. Lastly you need to sprinkle the icing sugar through a sieve all over the mince pies. We didn’t do this because we forgot to buy some at the shop! Very annoying!
They were super yummy and every one said that they tasted amazing – they could have been being polite, but that is what we are sticking to. Let us know if you try this mince pie recipe and tag us in your pictures if you do,
