Sweet potatoes pancakes are certainly a new find for us and we couldn’t wait to share them with you as they are so so tasty and really quick to make – if you have a cooked sweet potato to hand. If not, they aren’t so quick to make, but still worth it.
We had a nutribullet handy, but you can use whatever it is that you blend your food with – it’ll do the same thing.
For 5 mini pancakes you will need:
1 sweet potato
2 eggs
Maple Syrup
A side of your choice – we’ve used turkey rashers as they were in the fridge
First steam, boil, microwave, bake your sweet potato. It needs to be nice and soft so it just slides away from the skin. We pop it in the oven for 30 minutes – we have no microwave. One the sweet potato has cooled down enough to handle separate the flash from the skin and mash it up with a fork and both of the eggs, give it a quick stir and then pop it in your blender of choice.
With a nutribullet you only have to pulse it 3 or 4 times and then you’re good to go. You can if you wish, add cinnamon into the mixture.
Heat up your frying pan and add oil, we used coconut. Then when the pan is got, grab a teaspoon and teaspoon your mixture in to make pancakes shapes. We found that 5 teaspoons per pancake were pretty perfect. They were the perfect thickness and cooked throughout pretty quickly. We did 2 minutes on each side. Whilst the pancakes are cooking, grab another pan and cook up your turkey or bacon.
Plate it all and pour syrup all over them. If you want to be healthy – honey is a good substitute.
