Welcome to Frys, Eastbourne’s latest restaurant opening soon

We have a chat to the owner of Fry’s American BBQ – Chris Fry. Fry’s will be coming to Langney Shopping Centre very soon – but whilst we wait for the restaurant to open – we thought that we would find out a bit more about it.

1. Tell us a little bit about yourself.
I come from a poor background originally being bought up in a council house, I have worked hard in a massive variety of jobs over the years just to make ends meet like a lot of Eastbourne Residents. My main occupation for the last 20+ years has been working in corporate IT most recently for a Dell Technologies company which I was made redundant from in June last year due to the pandemic. IT can be one of the highest stressed industries in the world and I have had enough of the stress and wanted to try something new, something I have built.

 2. Is this your first restaurant?
Yes this is the first of many, I want to use this as the pilot / flagship store where I will be working closely with our new general manager, Llloyd Morton-Homles. and Head Chef, Paul Dean of the Eastbourne location to develop processes and procedures which we can use in other branches.

3. Why did you  call it Frys?
Errm my name is Chris Fry……  

Though that is the main reason for it I did brainstorm various ideas, smokehouse this or smokeshack that, none of them felt right and seemed too generic. it dawned on me that I have the perfect surname for this kind of restaurant, it’s short, and easy to remember.

4. What made you decide to open in Langney Shopping Centre?
I knew I wanted it in a high traffic area but in the town centre there is an over saturation of restaurants to compete with and you have to pay for parking wherever you go, often far from where you intend to go.
 
Langney is a very underserved area, the centre has recently had the new section built and have also been very welcoming and helpful in getting set up, I think they are as excited as we are about going in. We hope to work with the centre management and local businesses to create an amazing set of services and community at the centre.

5. What made you choose an American BBQ restaurant?
I have worked for a number of US companies over the years which has required me spending time all over the US and one of the things i loved about going there was the food especially the BBQ.
It’s super tasty comfort food, Smoked Beef Brisket, Smoked Pulled Port, Smoked ribs, or Pull Jackfruit for our vegan friends, fries, what’s not to love.

I wanted to bring my love of American BBQ to my hometown.

6. How have you developed the menu?
The menu to start with is limited to the key items of American BBQ, Beef Brisket, Pulled Pork, Pull Jackfruit, Ribs. This will allow my staff to settle in without too much stress of having to learn how to make and serve too many dishes.

Development was one the fun parts, I spent a few weeks developing each of our 3 types of BBQ Sauce, Maple, Cayenne and Cider & Paprika.

I tested out commercially available rubs to work out what kind of flavour we wanted to aim for before spending a few more weeks testing,  using my neighbours as my testing panel which they were more than happy to help. I think a few people may now already be addicted to our Maple sauce including myself.

7. What is your favourite meal on the menu?
I love it all obviously but if I was forced to choose it would probably be our Beef Brisket, Smoked at a low temp for a long time to produce an amazing smokey flavour it’s succulent and melt in the mouth.

8. What would be your perfect 3 course meal at Frys?
Course 1: Starting off with a few friends and some table fries and a few drinks
Course 2: as I said before my favorite is the brisket, with beans and coleslaw, or beans and fries
Course 3: Finishing strong with a Waffle and Ice cream

9. What would be your drink of choice to go alongside it?
Drinks wise, I love a milkshake, or an ice cold coke. 

10. What makes Frys unique?
At Frys you will get a family friendly environment, tasty food which has been freshly smoked everyday to our own recipes and not out of a packet. In short a premium casual dining experience at a reasonable price.

From an employer perspective Frys will be providing a supportive and caring environment where everyone is valued, they feel they are able to voice their opinions without any reprisals. We want to work with our staff to help develop their skill sets and provide a clear career path.


11. How do you want guests to feel when they are at Frys?
I want people to feel they have been transported into a Barbecue restaurant in the US, I have worked very hard with my father, Collin Fry, to build and set, dress the restaurant to make it feel like you are there.
 
We have custom fit the restaurant ourselves, including making many of the items hung on the walls which have been made by myself in my workshop from distressed bottle cap signs and lanterns to the custom distressed scaffold board tables even hand blacksmithing the shelf brackets so they fit in with the theme and not just off a shelf. There is a heavy feel of reuse with pallet timber cladding the walls and the smell of fresh wood and wood smoke in the air.
12. Are you still hiring?
We have stopped taking applications, I would like to thank everyone who has applied already, we will be replying to every single applicant even if they are unsuccessful we don’t feel people should be left hanging.
