If you don’t know already, it’s pancake day tomorrow. So we thought we would share with you, our favourite pancake recipe – Blueberry pancakes – with a twist. The main ingredients being 1 mushed banana and one egg with a few added extras. We have these during the week, but we skip the bacon and maple syrup and add two scoops of vanilla protein powder and honey instead of syrup – for one healthy brekkie.
To make 2 pancakes, you will need –
1 banana
1 large egg
Pinch of baking powder
Blueberries
Syrup
Bacon
Fruit of choice – We used strawberries and banana
Cooking oil of choice – we used coconut oil
What to do –
Start cooking your bacon, whilst that is going on –
Mush up your banana with a fork as smoothly as possible. Add your egg and continue to use fork to mix and mush. It doesn’t have to be completely smooth, but try to get it as smooth as possible.
Mix in your baking powder. Don’t skip this part as the pancakes will not be as fluffy if skipped.
Heat up a pan, add your cooking oil and let simmer on a medium heat. Drop in the mixture to form your two pancakes and then pop your blueberries on top.
Continue cooking on a medium heat until the top of the pancakes start to bubble, then it’s time to turn/ flip/ toss them over. A minute on the other side should just about do it. Repeat whole process if you want more than just one batch.
Pop pancakes on top of each other and then add your fruit of choice.
Then grab your bacon – we like ours krispy and burnt. Put on the top of the pancakes – ready for ….

Then dig in.
These will definitely be being made tomorrow morning for breakfast/ lunch and dinner. They are so tasty and super fluffy. Each bite as good as the next. Invite your friends round, whip these up and impress them.
